How to Make a Pumpkin Roll (10 easy steps!)
This is the post in which I will enlighten you on how to make a pumpkin roll. As a pumpkin roll-making-virgin, I was a little nervous for my first time. There were some questionable steps involved, but it's pretty exciting so get ready.
Step 1 -- invite your boyfriend's mom (who is a much more experienced baker than you) over to help
seriously, it is quite possible that my pumpkin roll would have sucked without her ;) If you don't have a boyfriend's mom, you can borrow mine... but you can't have her. She's awesome. And she's mine.
Step 2 -- gather ingredients
- 1/4 cup powdered sugar (to sprinkle on towel)
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon salt
- 3 large eggs
- 1 cup granulated sugar
- 2/3 cup pumpkin
- 1 (8 ounce) package cream cheese, softened
- 1 cup powdered sugar, sifted
- 6 tablespoons butter or margarine, softened
- 1 teaspoon vanilla extract
- 1/4 cup powdered sugar (optional)
phew! that seems like a lot! Also, I used "pumpkin pie spice" (I think -- BFF correct me if I'm wrong) instead of cloves. I found out cloves are ridiculously expensive and since I'm pretty sure I will never use them again until next year when I make a pumpkin roll, I decided not to waste the money.
Step 3 -- initial preparations
Pre-heat oven to 375 degrees.
Grease 15 x 10-inch jelly-roll pan; line with wax paper. Grease and flour the paper.
Sprinkle a towel with powdered sugar.
Step 4 -- prepare flour mixture
In a small bowl, combine flour, baking powder, baking soda, cinnamon, cloves (or pumpkin pie spice) and salt.
Step 5 -- beat things
Beat eggs and sugar in large mixer bowl until thick.
Beat in pumpkin.
Stir in the flour mixture.
Spread evenly into prepared jelly pan.
Step 6 -- bake the cake
Bake for 13 to 15 minutes.
Immediately loosen and turn cake onto the towel sprinkled with powdered sugar.
Carefully peel off paper.
Roll up cake and towel together, starting with narrow end.
But I do as I'm told.
Step 7 -- let the cake cool on a wire rack
This is when it's a good idea to have a baking party.
On a normal day I would have been totally bored waiting for my cake to cool, but since I was also baking with 3 other people, there was plenty of cookie dough to eat, pumpkin pies to try, and kids to play with while I waited :)
Step 8 -- the cream cheese part
Beat cream cheese, powdered sugar, butter and vanilla extract in small mixer bowl until smooth.
Carefully unroll cake; remove towel.
Step 9 -- Re-roll cake
Wrap in plastic wrap and refrigerate at least one hour.
Sprinkle with powdered sugar before serving.
Or pour powdered sugar all over it like I may or may not have done, whatever.
