paleo casserole

If you've been around here for awhile, you may remember that I tried to eat paleo last summer. (what is paleo?)

It worked for awhile, but inevitably life got in the way -- my birthday, vacations, etc. Since then I've still tried to eat somewhat paleo... maybe like 60-75% of the time. And the rest of the time I still try to make good choices, I just happen to really like ice cream and sandwiches!!! (and ice cream sandwiches)

But my CrossFit gym held a paleo challenge (eat 100% paleo for 30 days) in May and on average the participants lost 4% body fat! (!!!!!) and improved their workout times by 2-4 minutes. They're doing it again in a couple weeks. When I first heard they were doing it again, I thought I couldn't do it because if they started July 1st - HELLO my birthday is the 9th! Ice cream cake will be happening. And if they started it in August - well, we are going on vacation and I'm pretty sure I won't be eating paleo at an all-inclusive resort.

BUT they are starting it July 16th which is perfect! It's after my birthday and will end before our vacation :) So I think I'm going to give it a go!!! I've already started compiling some paleo recipes. Here's one I made today:

Paleo Chipotle Chicken Bacon Cauliflower Casserole

It was actually a lot easier than I thought it was going to be to make and tastes delicious!!! And I don't even like cauliflower typically but I loved this "casserole!" A lot of paleo recipes include cauliflower because it can be substituted for so many non-paleo things like rice, noodles, bread, etc.. so I figured I better get used to it!

• 1 large head of cauliflower 
• 3 cloves of garlic 
 1 red bell pepper, chopped 
 1 cup green onions, chopped 
 1 tsp chile powder 
 1 tsp chipotle powder 
 1/2 tsp ground cumin 
 Salt, to taste 
 2 chicken breasts, grilled and chopped 
 6 strips of bacon, cooked and crumbled 
 1 cup cherry tomatoes, chopped 
 3 Tbsp fresh cilantro, chopped 
 Olive oil or bacon fat for sautéing 

1. Cut cauliflower into florets. Steam over boiling water for about 12 minutes, until it florets are tender but not mushy. (Note: this is a good time to cook up your chicken and bacon if you haven’t already.) 

2. Preheat oven to 375 degree F. Heat frying pan to medium high heat. Add olive oil or bacon fat and red peppers. Sauté for 3 minutes. Add green onions and garlic and sauté for 2 minutes longer. Set aside. 

3. Cut cauliflower into ¾ inch chunks and place in a large mixing bowl. Stir in chile powder, chipotle powder, cumin, and salt until well blended. Stir in red pepper mixture, chicken chunks, crumbled bacon, tomatoes, and cilantro. 

4. Pour mixture into a lightly greased casserole dish. 

5. Bake at 375 degrees for 20 minutes, or until heated through and the top is golden brown. 

6. Serve & enjoy!!
