Paleo Shepherd's Pie

The 30 day paleo challenge at my CrossFit gym kicks off today!!!!

I'm a little nervous, but with the exception of the day of my birthday party (next weekend), I'm going to try my best to stick with it!! I think it will be easier now because I have the support of my fellow CrossFitters and I'm not just trying this totally by myself. If anyone has any [easy &] delicious paleo recipes to share please feel free! We had a paleo cookout yesterday and I got some good ideas that I'll share as I try them myself.... including chocolate covered bacon!!! I didn't think it sounded good but it was actually delicious... and yes, it's paleo!!!

Anyway, here's the recipe for Paleo Shepherd's Pie that I made last week:

Ingredients:

  • 2 tablespoons olive oil 
  • 1 large onion, diced 
  • 1 pound turkey or pork bacon, cut into 2 inch slices 
  • 2 cups diced carrots 
  • 2 cups diced celery 
  • 1 pound organic grass fed ground beef 
  • ½ teaspoon celtic sea salt 
  • 1 teaspoon black pepper 
  • ½ teaspoon smoked paprika 
  • 1 cup chicken broth 
  • 2 large heads cauliflower, trimmed, chopped and steamed until very soft

Directions:
 Heat olive oil in a very large frying pan
Saute onion for 15 minutes until soft
Add bacon pieces to pan and sauté until cooked, about 10 minutes
Add carrots and celery to pan and sauté in bacon fat for 10 minutes until soft
Add ground beef to pan and sauté until brown, just a few minutes
Season with salt, pepper and smoked paprika
Add chicken broth and cook down broth until 60% evaporated
Place cauliflower in food processor and puree until smooth
Pour ground beef mixture into a 9x13 inch baking dish
Pour mashed cauliflower over beef mixture Bake at 350° for 30 minutes
Serve

My thoughts on this recipe: It was decent, but I'm not a huge fan of cauliflower. I'm trying to get used to it, but until then I'll probably stay away from recipes with a lot of cauliflower ;) Also, next time I'll use real bacon instead of turkey bacon. The consistency was weird. Over all, pretty good and you'd probably love it if you like cauliflower!!
