Almost Paleo No Bake Cookies
AKA a healthy alternative to regular no bake cookies :)
At our last party (not the one we had Saturday but the one before that) someone brought No Bake cookies and I probably ate half of them. I didn't know that I love no bake cookies, but apparently I do. They are also my friend Renee's favorite cookie ever, so when I stumbled across a recipe for a healthier version right before the GORUCK Challenge I decided to make some to bring as a snack for us (mostly for her but I knew I'd get hungry too!)
I had never made no bake cookies at all before so I don't have any of my own creations to compare these to, but I thought they turned out super delicious! Especially for a healthier alternative! These are *almost* paleo... the only thing not paleo about them is the peanut butter and oats, and if you use almond butter then it's just the oats! But I'm very partial to peanut butter :D
1/2 cup organic coconut oil
1/3 cup unsweetened cocoa powder
1 1/2 cups coconut sugar
1/4 cup light amber organic agave nectar
1/2 cup almond milk
1/3 cup organic peanut butter (can use almond butter, too)
1 tsp vanilla extract
3 cups organic oats dash of cinnamon
In a medium saucepan, mix coconut oil, cocoa, coconut sugar, agave nectar and almond milk over medium heat and boil for 1 minute.
Take off heat and stir in peanut or almond butter, vanilla, oats and a dash of cinnamon.
Mix well and drop by heaping teaspoonfuls onto a cookie sheet lined with wax paper.
Refrigerate until firm, then transfer to a sealed container and store in the refrigerator.
