Paleo Sweet & Spicy Pork Chops with Sweet Potato Salad
Let's be honest...we all need more hours in the day. By the time I get home from work, go to the gym, come home, shower, take the dogs for a walk... the last thing I want to do is try to figure out what to make for dinner.
So a few weeks ago I signed up for e-meals! Yes, it was a few weeks ago but this was the first week I actually utilized it. So far I am loving it. It sends me dinner recipes for each night of the week, complete with a shopping list. The app is helpful because you can cross off the items on the list as you find them at the store. You can skip recipes if you don't like something, or like me - I skipped a couple simply because I know we always end up eating out at least a couple times a week. When you skip a recipe, it automatically adjusts your shopping list. If nothing else I am loving all the new dinner ideas.. I'm a creature of habit, so I always end up making the same thing over and over.... this has given all kinds of awesome recipes!!
They have several different plans you can sign up for - family plans, paleo, clean eating, etc.. I signed up for the Paleo for Two... perfect for us! (although Josh may miss his pizza!)
The recipe above was the first one I tried - Sweet and Spicy Pork Chops with Sweet Potato Salad! I figured I would try to share my favorite recipe from each week.
Sweet and Spicy Pork Chops
Ingredients: 2 (8oz) bone-in pork chops
3 tbsp olive oil
1/4 cup honey
3 cloves of garlic, minced
1 tsp salt
1 tsp ground cumin
1/2 tsp black pepper
1/4 tsp crushed red pepper
1. Pre-heat oven to 400 degrees.
2. Brown pork chops in 1 tbsp oil in a large oven-safe skillet over medium-high heat.
3. Combine honey, 2 tbsp oil, garlic, salt, cumin, black pepper, and red pepper in a bowl.
4. Pour honey mixture over pork chops; turn to coat.
5. Transfer skillet to oven.
6. Bake 15-20 minutes, or until pork chops are tender.
Sweet Potato Salad
1lb sweet potatoes, peeled and cut into 1 inch chunks.
1/4 cup organic mayonnaise
2 tbsp chopped fresh chives
2 tbsp yellow mustard
1/2 tsp salt
1/4 tsp pepper
1. Place sweet potatoes in a medium saucepan; add water to cover.
2. Bring to a boil.
3. Cook 15 to 18 minutes, or until tender.
4. Drain and transfer to a large bowl.
5. Stir in mayo, mustard, chives, salt and pepper.
It was yummy! And so nice to know that it was not only healthy, but paleo as well. I also like this program because it's endorsed by Dave Ramsey (Total Money Makeover)... and after week 1, I was surprised to find that I was able to buy all the ingredients for 5 dinners plus everything else I normally buy and still be within my budget. Dave Ramsey says it's because focused grocery shopping, or shopping with a purpose, saves money. I guess he's right!
